Water-milling
घराट में पिसा
Grain ground in a gharat — a Himalayan mill turned by a mountain stream.
What it is
A gharat (घराट) is the traditional water mill of the Himalaya, found across Himachal Pradesh and Uttarakhand. A channel of stream water turns a wooden wheel under the floor, and the wheel turns a millstone above it.
The stone turns slowly and steadily, so the flour stays cool as it is ground. Gharats have ground wheat, maize, barley and finger millet in the hills for generations.
At Full Circle
Our sattu is milled at our village watermill, and the barley for our mathri is milled by water too.
